Social distancing has made me bring out my inner Rachael Ray, and I’m not mad about it! I honestly forgot how much I love finding healthy recipes to make, which usually includes (for me) being paleo, dairy free, or minimal whole food ingredients.
One of my favorite healthy food bloggers to follow is Rachel Mansfield. The below paleo banana bread recipe is from her blog, and I give zero credit to myself besides taking the pictures and for producing the final delicious product-- it’s even “Shem approved”.
Total Time: 45 minutes
What You Need:
2 Bananas (The more ripe the better)
3 Eggs
2 Tablespoon liquid coconut oil or avocado oil
⅓ cup Creamy nut butter. Any kind works!
2 cups Almond flour
1 teaspoon cinnamon
1 teaspoon baking powder
Optional: 1 cup stevia
Optional: chocolate chips (highly recommend), blueberries, nuts
Instructions:
Preheat oven to 350 degrees and line a bread dish with parchment paper + grease
In a large bowl, mix together the eggs, bananas, oil, nut butter and vanilla until creamy
Mix in the flour, cinnamon and baking powder, and stevia until smooth (you can also mix in some chocolate chips, blueberries, or chopped nuts if desired!)
Add mixture into a bread dish and bake for about 40-45 minutes (or until toothpick comes out clean!)
Allow the bread to cool then slice and enjoy
