Healthy Buffalo Chicken Chili Recipe, Dairy Free & Gluten Free

The perfect healthy (dairy free & gluten free) fall meal prep recipe

Tis the season for football, cozy socks, and SOUP!

Fall is officially here and I am craving my favorite warm Buffalo Chicken Chili. This healthy recipe has the perfect balance of spicy and rich flavors, plus it only takes 10 minutes to prep and uses the most basic kitchen ingredients -- making it an easy lunch or dinner option!


I found this recipe all over Pinterest, however; one of my favorite bloggers, Ashley Bell influenced me to make it. I made a few switcheroos to the original recipe to make it dairy free, but you can easily switch it if you prefer real dairy!


My method to cook this recipe is in a crock-pot, but it can also be made on the stove (I just recommend sautéing the chicken ahead of time)! This large recipe serves 10-12 people, which makes it AMAZING for meal prepping! The food measurements can easily be divided in half for a smaller portion size.

INGREDIENTS

NOT pictured: chicken, celery salt, dried cilantro

  • 2 lbs Chicken Breasts (uncooked)

  • 2 (15 oz) Cans White Beans (drained & rinsed)

  • 3 (14.5 oz) Cans Fire Roasted Tomatoes (drained)

  • 6 Cups Chicken Broth (if you want it thicker use 4 cups)

  • 1- 1 1/2 Cups Buffalo Wing Sauce

  • 2 Packs Ranch Dressing Mix

Primal Kitchen Dairy Free Ranch Packets can be found on Thrive Market

  • 2-3 Cups Frozen Corn (or canned)

  • 2 tsp Onion Powder

  • 2 tsp Garlic Powder

  • 2 tsp Celery Salt

  • 1-2 tsp dried cilantro

  • 1/2 tsp Sat

  • 8 oz Cream Cheese

I used Trader Joe's vegan cream cheese, but you can use normal cream cheese, or take

it out all together to make it extra healthy!



After 3 hours on high, take out the chicken & shred it. I recommend these bear claws on Amazon! They are so sharp and make shredding chicken SO easy and pain free! Once shredded, put the chicken back in for the remaining hour + add the optional cream cheese.


Enjoy!

Throw in some optional crackers or sourdough bread to dip!
